Buttermilk Blueberry Muffins

I had some leftover buttermilk from a recipe of something I made a few days ago and decided to use the rest by whipping up a batch of Blueberry Muffins. Found them here. I always love to bake with something tangy like yogurt, sour cream or buttermilk. It keeps it moist and tender. (used frozen blueberries)

Ingredients

2 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 cup sugar
1/4 teaspoon salt
2 eggs, beaten
1 cup buttermilk
4 ounces butter or 1/2 cup canola oil
1 1/2 cups blueberries
1 teaspoon vanilla (optional)

Directions

Sift dry ingredients together in a large bowl.
In another bowl, whisk eggs, buttermilk and butter that has been melted and browned slightly.
Make a well in dry ingredients and pour in liquid ingredients, mixing quickly.
Fold in blueberries.
Spoon batter into greased muffin cups and bake till golden brown.
Bake at 400 F for 20 -30 minutes.

Back From Maui


We are finally back home from our trip to Maui. It was so wonderful to spend time with my family, a few friends, and eat all of my favorite foods. I probably ate fresh fish everyday :)

I picked up this really sweet Maui Bag from Otaheite, a boutique in Wailea. I love it and am so glad there are so many talented designers and makers doing cool things on Maui. I also picked up this beautiful indian cotton headband from a really nice boutique in Paia that I LOVE.

New Order In

While we were gone, I ended up ordering these boots! And these matching socks! They look so warm and comfy. I had them sent to a friend in the city while we were gone, so I don't have them quite yet. But I will just have to make a visit :)

Cisco is only seen shortly but he makes most of our photo shoots happen. So thrilled to have done this small project. Hopefully we can make more.

I love the idea of some really nice sunglasses but I'm really good at smashing and loosing them, so no for now. Cute shoes on the other hand, I'm okay with investing in :)

Helping my cousin

Since we've been hanging at home on Maui, I've taken some time to spend with my cousin Vanna. She and her husband are working on their current house and starting to plan for building their new one.

She, her son and I spent the day at The Home Depot looking at different lighting fixtures. I love simple down lights for most rooms, but she's also interested in some pendent lights for dining / eating rooms. It's fun planning home options with her.
